Ingredients
3 poblano peppers, roasted and peeled
4 small cambray potatoes, cooked and quartered
2 zucchinis, finely diced
2 tomatoes, finely diced
3/8 lb. chicharrones, in pieces (Rudolph Foods Original Pork Rinds)
1/2 small onion, diced
1 teaspoon oil

Directions
Heat oil in skillet. Cook potatoes and onions. Add chicharrones, stir occasionally.

I bought your Cracklins for the first time. Good not greasy. I like to eat them with sliced apples. I ration them out to myself and remember the Depression in the Boomtowns in Oklahoma. My old 81 years have a lot of stored memories. The bottom line is - your Cracklins are 'right on.' But you know that! Thanks.

My husband John Rudolph was first welcomed to the snack food industry while selling a Mexican-style gourmet snack, "pepitas" or fried pumpkin seeds. We've kept our Hispanic beginning front and center ever since, with pork rinds — or chicharrones to our friends to the south.
