Ingredients
2 boneless, skinless chicken breasts
1 1/2 cups pork rinds
1/2 teaspoon garlic powder
1 tablespoon parmesan cheese

1 tablespoon chopped fresh parsley
1 egg
1/8 cup olive oil
4 lemon wedges

Directions
Place chicken breasts, one at a time, under a plastic bag to prevent splattering, and pound flat with the flat side of a meat pounder. Chicken should be quite thin.

Spring is in the air, so what better time to enjoy some fun and festive recipes. With the Easter holiday right around the corner, I have some great suggestions for sharing the goodness of pork rinds and my other snacks with family and friends.

For a festive Sunday supper, I love to serve:
Main dish: Chicken Cutlets with Pork Rind Breading
Side dish: Cracklin Corn Bread
Dessert: Cinnamon Churros - Try crushing them up as an ice cream topper!

I also wanted to share with you a fun activity for spring time. If you’re looking for a snack to accompany dying Easter eggs, why not try this: Use my recipe for Chocolate Drizzled Churros, and replace the milk chocolate with white chocolate. Dip the Churros into the chocolate and sprinkle them with of your choice of colored candies. Let the chocolate harden and you have a tasty and festive treat!
  
  The other day my girl friends and I had a wine and cheese party, and one of my friends surprised us with a bag of pork rinds to go with our cheese platter. I just have to tell you, it was a delicious compliment to our party! Do you have any recipes that use cheese with pork rinds? I’d love to surprise my friends at our next party.
