Welcome back to Mary's Kitchen Club, friends! I'm so happy to spend time with all of you again this month. I have so much to share about pork rinds, especially this month. It's National Nutrition Month! What better time to spread the good news that not only are pork rinds delicious, but they're surprisingly nutritious too! More on that in just a bit.

Cake Ingredients
7 large egg whites
2 cups pork rind flour*
2 1/4 cups Splenda
1/2 cup cinnamon
1 teaspoon ground nutmeg
1 tablespoon cinnamon extract
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup boiling water
4 large egg yolks
1 cup scalded, soured
heavy whipping cream**

Frosting Ingredients
8 oz cream cheese
1/4 cup butter
1 Tablespoon vanilla
1/2 cup Splenda

Q. I've been trying to get my kids to try pork rinds, but they have been somewhat reluctant. Do you have any suggestions for getting them to try my favorite snack? It'd be so much easier if we could all enjoy the same snack at the same time!

Check out what one mom said about her kids eating pork rinds in the "Things I Love Thursday" article. Her children thought they tasted like bacon flavored Cheetos, and she likes them because they don't leave grease on your fingers like many popular snack foods.
